The 7/8 Cooling Rule Explained

The 7/8 cooling point is a practical benchmark for comparing how quickly a cooling system removes field heat. It is reached after seven-eighths—87.5%—of the temperature difference between the product at loading and the cooling medium has been removed.

The Formula

7/8 target temperature = cooling-medium temperature + one-eighth × (starting product temperature − cooling-medium temperature)

Worked Example

Product enters at 80°F and the cooling medium is 32°F.

  • Starting difference: 80 − 32 = 48°F
  • One-eighth of the difference: 48 ÷ 8 = 6°F
  • 7/8 target: 32 + 6 = 38°F

At 38°F, seven-eighths of the original 48°F difference has been removed. This calculation does not say that 38°F is the correct final holding temperature for the commodity; that decision comes from current commodity-specific guidance.

Why It Helps

Cooling curves are often compared by half-cooling time. Under a simple exponential cooling model, three half-cooling periods remove seven-eighths of the initial temperature difference: one-half remains after the first, one-quarter after the second and one-eighth after the third. Real loads may not follow a perfect curve, so measurements still matter.

What Changes The Cooling Time
  • Product size, density, moisture and respiration.
  • Package vent area, vent alignment and stack pattern.
  • Air or water flow and the resistance through the load.
  • Cooling-medium temperature, refrigeration capacity and simultaneous heat loads.
  • Pallet sealing, bypass air, product depth and equipment cycling.
How To Verify

Measure representative pulp temperatures, including locations expected to cool slowest. Record starting temperature, cooling-medium temperature and elapsed time. A room sensor or water thermometer alone cannot prove that the center of the product reached the benchmark.

Important Limit

The 7/8 point is not a universal storage specification, food-safety standard or quality guarantee. Storage recommendations vary by cultivar, maturity, package, market and intended storage duration.
