Hydrocooling Systems for Fresh Produce

Hydrocooling removes field heat by bringing chilled water into direct contact with the product in a flume, tank or shower system. Water transfers heat efficiently, but a fast machine is useful only when the commodity and package tolerate wetting and the water system is designed for uniform contact and sanitary operation.

WHEN HYDROCOOLING FITS

Common candidates include sweet corn, snap beans, carrots, celery and other commodities supported by current Extension guidance. Do not assume a crop is suitable because another crop uses the same package or target temperature. Product physiology, surface injury risk, water infiltration and package strength all matter.

SYSTEM TYPES

• Flume systems move product in chilled water and can combine transport with cooling.
• Immersion tanks hold product or containers in chilled water for a controlled period.
• Shower systems recirculate chilled water over bins or conveyors.

• Commodity, package, product depth and pounds per hour.
• Entering pulp temperature, target temperature and allowed residence time.
• Water flow, contact pattern, filtration, sump volume and pump head.
• Product load, water pull-down load, tank and piping heat gain and simultaneous loads.
• Sanitizer program, monitoring, make-up water, bleed-off and cross-contamination controls.
• Drainage, corrosion-resistant materials, cleanability, controls, redundancy and future expansion.

SANITATION IS PART OF THE DESIGN

Recirculated water can spread contamination if filtration, disinfectant concentration, pH, organic load, water temperature and turnover are not controlled. Final food-safety procedures should be developed with current Extension and regulatory guidance.

COMMON DESIGN MISSES

Uneven water contact, insufficient refrigeration capacity, short residence time, weak or non-water-resistant packaging, poor filtration, uncontrolled water chemistry and inadequate drainage can undermine performance. Verify representative pulp temperatures; water temperature alone does not prove the product is cooled.
